Cappadocia University's international strategy is to provide international experience in training and research for students and teaching staff, help incoming foreign students and academicians integrate with the university, take maximum advantage out of shared programs and projects, and to contribute to the development of the Cappadocia Region. Furthermore, we believe that by joining the exchange programs and creating projects or being a partner of already created projects will also contribute to the personal and vocational development of all participants and help them improve their skills.

Ottoman Cuisine combined various culinary traditions of their realm with influences from Middle Eastern cuisines, along with traditional Turkic ingredients from Central Asia such as yoghurt although the Ottoman meals are known to begin always with a broth which was contained with bee for chicken stock, yoghurt, fish stock, to which were added rice, parched wheat, ground minestrone, dried or fresh vegetables and roots.

KUN-Ottoman Cuisine is a five-day international training program that aims to improve cook abilities for the participants in an international arena.  Participants will have the opportunity to cook on traditional cuisine in an authentic international environment at Cappadocia. 

The course aims to develop participants into competent and confident cooks through one solid week of cooking, tasting, learning and having a great time in Cappadocia.

 

Quota              : The quota is limited to 20 participants.

Participants are expected to obtain Erasmus+ mobility grants from their home institutions to cover the travel, living and accommodation expenses related to their participation in the event.

 

Hours              : Monday to Friday from 10.00 am – 1.00 pm with extended classes on certain days. At lunchtime, participants will sit together around the table to enjoy and talk about the food that has been made that day.

 

Language         : The course is taught in English and we require participants to have a good understanding of spoken and written English.

 

Fee                  : The fee of the program which contains Ottoman Cuisine course, Cappadocia tours, accommodation, Breakfast & Dinner, and local transfers are 295 € (single room), 275 € (double room) which also includes the cost of all necessary ingredients and equipment as well as a daily fresh apron. You will need to purchase or bring your own chef’s jacket and trousers. This fee is inclusive of VAT. Costs of the international flight, insurance, and private extra needs are covered by the participants.

Application     : The course is suitable for all ages, for people who have an interest in cooking and want to develop their existing skills and repertoire. But the target group is university staff (teaching and non-teaching) dealing with Culinary Arts, Gastronomy, Food Technology, Tourism, and also international officers working in exchange programmes' offices.

 

Two main activities will be organized to foster networking opportunities:

Ottoman Cuisine Course (The classes are mostly hands-on, so you will doing all the meals with the Chef in a fully equipped practice kitchen.)

Social (Cappadocia Tours) & networking activities (small group presentations/per participants about their institutions)
